When visiting my son in Vegas, he treated us
to his house specialty!! What a Specialty!!

1 onion,
chopped
3 ribs of celery, chopped
2 carrots, grated
1 cup Parmesan cheese
1 can chopped tomatoes |
2 boneless, skinless
chicken broth, cut in small cubes
4-5 Italian Sausage, cut in small chunks
1 can chicken broth
1 pint heavy whipping cream |
Sauté onions, celery, and carrots in olive
oil until onions are transparent. Add chicken, sausage and chicken broth
to pan, cook until broth is reduced by one half. Add cream and cheese,
cook until cheese is melted. Add the chopped tomatoes just before
serving.
I have served this to several of our
friends, and one time changed the Italian sausage to shrimp, it was
great that way also.
