Iowa Scalloped Corn
Iowa grows lots of corn, and what holiday dinner would be complete with out scalloped corn. I used to prepare this in the same way my grandmother did, but I hated those oysters, so I now omit them. I did include them here for you to decide.
| 2 cans cream style corn 2 eggs, slightly beaten salt and pepper to taste |
1 tube crackers ½ cup evaporated milk 1 pt. fresh oysters (optional, very optional) |
In large plastic bag, break up crackers. Mix all ingredients in 2-quart greased, oven baking dish. If you use the oysters, be sure to drain them or you will have something more like scalloped oysters. Bake in a 350ºF oven for 45 minutes or until a toothpick inserted in the center comes out clean. Serves 8
